Frozen Peanut Butter Chocolate Balls

I know, I know. I made you balls.

Frozen. Chocolate. Balls.

HOWEVER, they are healthy balls! Remember those sinful brownies from the other day? This is like their healthy cousin. The one that shows up to family gatherings with the vegetarian tofu scramble. Ok, that’s not selling these at all. I’m afraid their looks probably aren’t selling them either.

These are supposed to be a tasty, healthy treat. That’s all they’ve got going for them and that’s all I need to hear. Frozen bites of chocolate-y peanut butter-y good for you balls when you need a guilt-free pick me up.

No baking. No defrosting. No guilt. Only yum.

They’re pretty easy. When I say easy, I mean, you’ll look at this and say “really Fabi?”

The cool thing is, I’m already having visions of swapping certain ingredients out for others. How about puffed quinoa cereal instead of oats, and almond butter instead of peanut? Yeah, I went there.

You should too.

Choco-Peanut Frozen “Cookies”

acquired from Weight Watchers

1/4 cup skim or almond milk

2 tbsp unsweetened cocoa powder

2 tbsp sugar (try using maple syrup or honey)

1/4 cup chunky natural peanut butter

1 cup uncooked old fashioned oats

2 tsp canola oil (I used coconut oil)

Mix milk, cocoa powder and sugar in a small saucepan over low heat.

Bring to a boil, then remove from heat and add peanut butter. Stir into mixture until melted.

Stir in oatmeal and oil.

Drop 16 spoonfuls onto a plate or tray lined with parchment or wax paper to avoid sticking. I didn’t do this…but they did indeed stick. Dum dum…

Freeze for at least four hours; they are better the day after you make them.

    Just thought I’d check in to my favourite blog and low and behold Fabi has blessed me with my two favourite things! Can’t wait to finish up my little tasks and get trying some recipes!
